Step 1
Sauté vegetables in butter until soft.
Step 2
Add ham and saute a couple of minutes until warmed.
Step 3
Add 1 cup egg batter (mix above egg batter ingredients).
Step 4
Add 1/2 of the cheese.
Step 5
Cook until egg cooks halfway through on bottom.
Step 6
Flip over and cook rest of the way.
Step 7
Sprinkle rest of grated cheese, fold over on plate.
Step 8
Cheese will melt in 1 or 2 minutes.
Step 9
Add salsa and serve.
