Step 1

Sauté vegetables in butter until soft.

Step 2

Add ham and saute a couple of minutes until warmed.

Step 3

Add 1 cup egg batter (mix above egg batter ingredients).

Step 4

Add 1/2 of the cheese.

Step 5

Cook until egg cooks halfway through on bottom.

Step 6

Flip over and cook rest of the way.

Step 7

Sprinkle rest of grated cheese, fold over on plate.

Step 8

Cheese will melt in 1 or 2 minutes.

Step 9

Add salsa and serve.

Made this omelet last night for dinner scaling it back to one serve, In the How To make you do not mention the ham or the salsa so I put the ham in with the cheese and served the salsa on the side with some sour cream and also I folded the omelet in the fry pan and all came to together beautifully and made a very delicious dinner.
