Ingredients

The ingredients are:
  • 1/4 cup yellow onion, diced
  • 2 ounces ham, diced (1/4 cup)
  • 1/4 cup bell pepper, diced
  • 1 tablespoon butter
  • Egg Batter (2 cups, see below)
  • 1 cup salsa
  • 1/4 cup shredded cheese (I use a Mexican blend)
  • FOR EGG BATTER
  • 3 large eggs, beaten
  • 2 tablespoons half and half (or milk)
  • Tabasco (1 dash)
  • Salt and pepper, to taste

How to Make

  • Step 1: Sauté vegetables in butter until soft.

  • Step 2: Add ham and saute a couple of minutes until warmed.

  • Step 3: Add 1 cup egg batter (mix above egg batter ingredients).

  • Step 4: Add 1/2 of the cheese.

  • Step 5: Cook until egg cooks halfway through on bottom.

  • Step 6: Flip over and cook rest of the way.

  • Step 7: Sprinkle rest of grated cheese, fold over on plate.

  • Step 8: Cheese will melt in 1 or 2 minutes.

  • Step 9: Add salsa and serve.
