Step 1: Sauté vegetables in butter until soft.
Step 2: Add ham and saute a couple of minutes until warmed.
Step 3: Add 1 cup egg batter (mix above egg batter ingredients).
Step 4: Add 1/2 of the cheese.
Step 5: Cook until egg cooks halfway through on bottom.
Step 6: Flip over and cook rest of the way.
Step 7: Sprinkle rest of grated cheese, fold over on plate.
Step 8: Cheese will melt in 1 or 2 minutes.
Step 9: Add salsa and serve.
