Step by Step Method

Step 1

Mix together eggs, mayo, Old Bay, pepper, worcestershire sauce, lemon juice and mustard, until creamy. Add bread crumbs, mixing evenly. Add in the crab meat and the chivest, being sure to mix evenly. Shape into small cakes. Let the crab cakes sit in the refrigerator for 30 minutes to an hour.

Step 2

Preheat broiler. Place crab cakes on a large cookie sheet. Brush with the melted butter and very lightly dust with the tablespoon of flour. Cook under broiler, turning once, until golden brown. Serve with remoulade.

These were such delicious crab cakes. I really loved the lump crab because you got big chunks of crab. I made up a Remoulade sauce to spoon over the top and it really complimented the crab cakes. Thanks for the suggestion for the sauce!
