Step 1

Fry onion and potato in oil.

Step 2

When browned add paprika, garlic,oregano, and pepper.

Step 3

Brown a little more.

Step 4

When done sprinkle with Parmesan cheese and stir.

This recipe was made on 9/18 as part of mine and my SO's dinner and most importantly for the " Family Picks " portion of the " Culinary Quest 2014 ". I had used one very large leftover baked potato and just a little more than 1/4 cup chopped onion. The remaining ingredients stayed the same.I take that back,they sort of stayed the same I added extra cheese(I'm a cheeseaholic). I think this is great way to use up leftovers baked potatoes. Yummy potatoes. I made these to go along side some scrambled eggs and they were a real hit. Simple and good. Thanks Dee for yet another keeper. Made for Culinary Quest 2014.
