Step by Step Method

Melt butter and add flour, season lightly.

Don't brown just cook flour taste out.

Add milk and cook until thickened.

Season to taste.

Add mustard 1 tablespoon at a time to get the right flavor. Don't cook because mustard gets bitter.

Plate: cut eggs in half and pour sauce over equally.
Step 7
Crumble crisp bacon on top.
Step 8
Strew herbs over top.
Step 9
Serve with rye toast you have buttered.
