Step 1: Melt butter and add flour, season lightly.
Step 2: Don't brown just cook flour taste out.
Step 3: Add milk and cook until thickened.
Step 4: Season to taste.
Step 5: Add mustard 1 tablespoon at a time to get the right flavor. Don't cook because mustard gets bitter.
Step 6: Plate: cut eggs in half and pour sauce over equally.
Step 7: Crumble crisp bacon on top.
Step 8: Strew herbs over top.
Step 9: Serve with rye toast you have buttered.
