Step by Step Method
Step 1
Pre-heat oven to 425F.
Step 2
Place Sweet potatoes in a large plastic bag.
Step 3
Mix together the oil, curry, salt, paprika & pepper.
Step 4
Pour over the sweet potatoes and mix well so the wedge are all coated evenly.
Step 5
Roast 15-20 minutes or until the sweet potatoes are tender, turn mid roasting.
Step 6
Sprinkle with chopped cilantro if using.
