Grilled Sweet Potatoes With Onions & Peppers

Step 1

Prepare grill (medium heat).

Step 2

In a small cup or bowl whisk together the oil and thyme.

Step 3

In a large bowl toss the vegetables (sweet potatoes - bell pepper). Drizzle with 1/4 cup of the oil mixture and toss.

Step 4

Grill vegetables until tender, turning often (15-20 minutes) - the peppers and onions cook faster than the potatoes. A grill basket works well for this recipe.

Step 5

Whisk vinegar into remaining oil mixture; season to taste.

Step 6

Drizzle mixture over the vegetables.

A great combo of some of my favourite vegetables! Other than adding a grinding of back pepper I made as posted. Loved every bite! Have to give the foil packet a go next time around.

Delicious! I adapted the recipe in terms of cooking style but left the ingredients the same. I put the veggies with oil and thyme onto a double-lined foil and made a big packet for the grill. I cooked the packet on the grill for about 30 minutes (15 min. each side). The flavor and veggie combination is wonderful! This is a keeper. Thank you!
