"I made this last year for the holidays and everyone begged me for the recipe, it's a wonderful pie to serve on the holidays, make sure you have copies of this recipe to hand out to your guests. This pie freezes well. Try mixing blueberries in with the cranberries. "

Step by Step Method

Step 1

Butter and lightly flour a 10-inch DEEP DISH pie plate or quiche pan with a solid bottom (this will not fit into an 8 or 9-inch pie plate, must be a 10-inch deep-dish).

Step 2

Place cranberries in pan. Sprinkle with nuts and 1/2 cup sugar.

Step 3

Beat eggs, 1 cup sugar, melted butter, liqueur, and orange rind together in a mixing bowl until blended. Add flour and baking powder, beating with a whisk until smooth. Pour over cranberries.

Step 4

Bake in a preheated 325ºF oven 35-45 minutes, or until the top is set and golden. Serve warm or cool with a scoop of ice cream.
