The taste was great, but making it was problem. I only made half a batch, so there was only 1/8 cup boiling liquid and that wasn't enough to warm the mixture. When I added the pineapple to the butter/confectioners sugar and boiling water, the coolness made the butter solidify into little clumps. It looks curdled, but it's not. Will warm the pineapple next time!! But, DH and I both loved it! PS It is now December, 7 months since I made this. Found the container in the back of the fridge and took a taste and a smell- ok. Served over pancakes today and they were enhanced by this tasty sauce! Little lumps and all! (I scoff at "use by" dates!)
