"Some crock pot meals require a bit of time consuming preparation. This dish does not. It's great if you want to take a few minutes and throw everything into the crock, plug it in and go on with your day. You'll come home to a delicious, hearty soup. Simply prepare all your veggies the night before. Keep the diced potatoes in water to keep them from turning brown. You'll be adding the water to the crock so no nutrients will be lost. Feel free to add your favorite veggies. I think mushrooms could be a delicious addition."

Step by Step Method

Step 1

Add all ingredients except cheese to crock pot, stir, all enough water to cover ingredients, cover and cook on low for 8 to 12 hours or on high fro 3 to 5 hours.

Step 2

Stir well and serve; sprinkle with cheese, if desired.

It's been 40 below and lower here this past week, nothing like a steaming bowl of soup for supper. The teenager had basketball practice and came home super hungry, he enoyed this delicous soup as much as I did! As your previous reviewer I took a few minutes to brown the meat as well as saute the onions. Then let the crock pot do all the work. Love when I walk into the kitchen and supper is ready to go. Will definetly make this one again. Into the Soup Cookbook for this one.

This was very easy to make with great flavor, I made one change and browned the ground beef first in a skillet then drained all the fat and went for the mozzarella cheese option, everyone love this thanks Dreamer_in_Ontario
