"A few years ago Baby Kato, a fellow member of a recipe site, published a recipe for crusty baked chicken using instant mashed potato and I thought Mmm that would be great on fish. So I thank Baby Kato for inspiring me to make this recipe. I am sure that you will love it. Use any favorite firm white fleshed fish. I like to serve the fish with a wedge of lemon and some tartare sauce"

Step by Step Method

Step 1

Mix together the potato flakes, garlic, thyme, oregano, salt and peppper

Step 2

Dip the fish in the beaten egg and coat well with the potato flakes

Heat the oil in a skillet over medium heat, fry the fish until golden on both sides

So easy and so simple and so delicious. I used flathead tails, and made this for Good Friday dinner, and it was really enjoyed by all. We had a GF guest who loved this! I don't cook fish much, but now I know of this recipe I will be sure to make this again. It doesn't get any easier or tastier than this. Thanks Bergy.
