Cretons Gluten Free
"This is a French Canadian pork pâté I have been making since I was a child with my grandmother. Both my daughter and I cannot tolerate gluten so I have tweaked this by using gluten-free dry breadcrumbs that I make using the Schar brand gluten-free bread or buns. I just chop them into small cubes and dry them out in the oven, then I grind them in the food processor. Of course, you can use store-bought, gluten-free breadcrumbs, just make sure they are not seasoned. You will love the aroma while this is simmering... This freezes well for future use."

Step by Step Method
Step 1
Combine the pork, milk, onions, and garlic in a Dutch oven and cook over medium-low heat.
Step 2
Simmer, stirring frequently with a wooden spoon, for about 45 minutes, adding a bit of water if necessary to allow simmering without sticking. (You want the mixture to be moist with just a bit of liquid to absorb the bread crumbs)
Step 3
Mash with a potato masher to break apart any big chunks.
Step 4
Add the cinnamon, cloves, salt, and pepper and continue simmering for about 15 minutes more.
Step 5
Add bread crumbs and mix well.
Step 6
Cool completely and place in a container, packing the mixture down tightly; cover and refrigerate until ready to eat.
Step 7
Serve cold as a spread for crusty bread or crackers.
