"You can garnish crepes with dulce de leche, jelly, jam, marmalade, fruit and ice cream, etc...My favorite is Nutella and strawberries with a little powder sugar. They freeze great (IF...there is any leftovers)"

Step by Step Method

Step 1

Sift the flour, sugar and salt into a bowl. Make a well in the center of the flour mixture. Break the eggs into the well and add 1/3 of the milk. Gradually whisk the flour mixture into the wet ingredients until very smooth. Then whisk in the butter, remaining milk and vanilla. Let the batter rest 30 minutes at room temperature.

Step 2

Brush a crepe pan with the melted butter. Heat the pan over medium heat. Then poor about 2 Tbs batter, tilting the pan to thinly coat the bottom. Cook the crepes until golden brown. Then flip it with the spatula and cook the other side. Repeat to cook all the crepes.

I loved how quick and easy it was to make crepes with this recipe. The results were terrific, just the way I like them. Crisp and tender. I filled one with banana and cream and one with strawberries and cream, garnished with a little icing sugar for a perfect breakfast treat. Served with good strong coffee. These are one of the BETTER crepe recipes that I've had the pleasure to make. Fantastic and restaurant worthy! I filled them the saute'd pear which I cooked into a sweet sauce. Started with a sprinkling of powdered sugar over the top but it went over the moon when I sprinkled cinnamon over all. Great for breakfast, brunch, or as a light dessert. Wonderful recipe MsPia! Thank you so much for sharing it.

They turned out fantastic!!! I made 1/2 of the recipe and cooked them in my new cast iron griddle. I served them with some fresh sliced strawberries and whipped cream, yummy!! Thanks for sharing the recipe.

This recipe is very good and works nicely. Only diffs are that I gave the batter a spin in the blender, and used an electric crepe cooker for them instead of stove top. I will say the recipe is smaller than expected- I got about 8-10 crepes, enough for about 3 people. People wanting more should make a double batch. Reviewed for Billboard Tag.
