Step by Step Method
Step 1
In a 4 quart saucepan over medium heat, cook bacon until slightly crisp.
Step 2
Remove bacon.
Step 3
Drain off excess fat, leaving 1-2 tablespoons in pan.
Step 4
Add onion, celery, red pepper, salt and pepper and cook 3-5 minutes, until softened and fragrant.
Step 5
Add chicken broth and bring to boil.
Step 6
Reduce to simmer.
Step 7
Add salmon pieces.
Step 8
Cook 5 minutes or until salmon is cooked through and flakes easily.
Step 9
Stir in heavy cream and spinach.
Step 10
Add bacon back in.
Step 11
Adjust seasoning to taste.
