Ingredients

The ingredients are:
  • 6 ounces thick sliced bacon, chopped, (6 slices)
  • 1 cup onion, diced
  • 3 ribs celery, sliced
  • 1 cup red bell pepper, diced
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 8 ounces heavy whipping cream, (1 cup)
  • 6 cups chicken broth
  • 1 pound salmon, skin removed, cut into 1” pieces
  • 8 ounces fresh baby spinach

How to Make

  • Step 1: In a 4 quart saucepan over medium heat, cook bacon until slightly crisp.

  • Step 2: Remove bacon.

  • Step 3: Drain off excess fat, leaving 1-2 tablespoons in pan.

  • Step 4: Add onion, celery, red pepper, salt and pepper and cook 3-5 minutes, until softened and fragrant.

  • Step 5: Add chicken broth and bring to boil.

  • Step 6: Reduce to simmer.

  • Step 7: Add salmon pieces.

  • Step 8: Cook 5 minutes or until salmon is cooked through and flakes easily.

  • Step 9: Stir in heavy cream and spinach.

  • Step 10: Add bacon back in.

  • Step 11: Adjust seasoning to taste.
