Step 1: In a 4 quart saucepan over medium heat, cook bacon until slightly crisp.
Step 2: Remove bacon.
Step 3: Drain off excess fat, leaving 1-2 tablespoons in pan.
Step 4: Add onion, celery, red pepper, salt and pepper and cook 3-5 minutes, until softened and fragrant.
Step 5: Add chicken broth and bring to boil.
Step 6: Reduce to simmer.
Step 7: Add salmon pieces.
Step 8: Cook 5 minutes or until salmon is cooked through and flakes easily.
Step 9: Stir in heavy cream and spinach.
Step 10: Add bacon back in.
Step 11: Adjust seasoning to taste.
