Step by Step Method

Step 1

Cook tortellini according to package directions. Meanwhile, in a large skillet, melt butter. Add garlic and saute for a couple of minutes. Add flour and stir for 2 minutes, being careful not to brown the flour. Add half and half or cream and stir until smooth. Stir in cheeses, onion powder, garlic powder (if using), Italian seasoning, and pinch of nutmeg.

Step 2

Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat. Taste for seasoning and correct if necessary.

Step 3

Drain tortellini; add to the cheese sauce. Stir in the prosciutto, peas, pepper, and lemon rind. Cook for 5 minutes or until heated through.

Delish. I love this dish and have made several different variations of it. This is now my very favorite. I loved the seasonings and adding the mozzarella put it over the top for me. Very creamy and filling. This is now in my Best of cookbook. Thanks for sharing, Nat.

I did make a few change to this recipe ~ I used fresh cheese and ricotta Tortellini instead of frozen, I halved the peas and left out the prosciutto ham ~ using some fresh tomato instead (only because my DD does not eat meat). Apart from that everything was as per the recipe, and what a recipe! Apart from me overcooking the Tortellini (only a little) this was amazing. I served with garlic bread and we really did enjoy this recipe. I also had enough for the next day... wow, we really did enjoy this. So creamy and rich and full of flavor! I will be making this again for sure!
