Creamy Jalapeno Sausage Pasta
"You can adjust the amount of jalapenos to control the heat in this recipe. If I am using spicy Italian sausage, I will only use one jalapeno or I'll use a bell pepper. The creamy sauce helps curb some of the heat, but depending on the peppers, it can get spicy."

Step by Step Method
Step 1
Cook the pasta according to package instructions until al dente. Drain and set aside.
Step 2
In a large skillet, heat the olive oil over medium heat. Add the sliced Italian sausage and cook until browned and cooked through, about 8-10 minutes. Remove the sausage from the skillet and set aside.
Step 3
In the same skillet, add the diced jalapeno peppers and minced garlic. Sauté for 1-2 minutes until fragrant.
Step 4
Return the cooked sausage to the skillet and add the can of diced tomatoes with basil, garlic & oregano (including the juice). Stir to combine and cook for another 2-3 minutes.

Reduce the heat to low and add the softened cream cheese to the skillet. Stir until the cream cheese melts and coats the sausage mixture.
Step 6
Gradually add the chicken or vegetable broth, stirring continuously, until a creamy sauce forms. Cook for an additional 2-3 minutes to heat through.
Step 7
Add the cooked pasta to the skillet and toss to coat the pasta evenly with the creamy sauce.
Step 8
Stir in the grated Parmesan cheese and chopped basil or parsley. Season with salt and pepper to taste.
Step 9
Remove from heat and let the flavors meld for a few minutes.
Step 10
Garnished with additional Parmesan cheese and fresh herbs, if desired.
