Ingredients

The ingredients are:
  • 1 pound pasta (such as penne or rotini)
  • 2 tablespoons olive oil
  • 2 pounds Italian sausage, sliced into rounds
  • 2 jalapeno peppers, seeds and membranes removed, finely diced
  • 6 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes with basil, garlic & oregano
  • 8 ounces cream cheese, softened
  • 1 cup grated Parmesan cheese
  • 1 cup chicken or vegetable broth
  • 1/2 cup chopped fresh basil or parsley
  • Salt and pepper to taste

How to Make

  • Step 1: Cook the pasta according to package instructions until al dente. Drain and set aside.

  • Step 2: In a large skillet, heat the olive oil over medium heat. Add the sliced Italian sausage and cook until browned and cooked through, about 8-10 minutes. Remove the sausage from the skillet and set aside.

  • Step 3: In the same skillet, add the diced jalapeno peppers and minced garlic. Sauté for 1-2 minutes until fragrant.

  • Step 4: Return the cooked sausage to the skillet and add the can of diced tomatoes with basil, garlic & oregano (including the juice). Stir to combine and cook for another 2-3 minutes.

  • Step 5: Reduce the heat to low and add the softened cream cheese to the skillet. Stir until the cream cheese melts and coats the sausage mixture.

  • Step 6: Gradually add the chicken or vegetable broth, stirring continuously, until a creamy sauce forms. Cook for an additional 2-3 minutes to heat through.

  • Step 7: Add the cooked pasta to the skillet and toss to coat the pasta evenly with the creamy sauce.

  • Step 8: Stir in the grated Parmesan cheese and chopped basil or parsley. Season with salt and pepper to taste.

  • Step 9: Remove from heat and let the flavors meld for a few minutes.

  • Step 10: Garnished with additional Parmesan cheese and fresh herbs, if desired.
