"A few years ago I had met Chef Cat Cora in Orlando at Epcot during their Food and Wine Festival. I got to meet Chef Cora and had a great chat with her. She gave me one recipe of hers to try out and this is it. I didn't realize how petite of a thing she was and so pleasant to talk to. Was a great experience"

Step by Step Method

Step 1

While a large saucepan is coming to a boil, cut up the cauliflower into florets

Step 2

Add cauliflower to boiling water and bring back to a boil. Then lower heat to medium and simmer for about 15 minutes or until tender then drain

Step 3

Put all ingredients in a food processor until blended. Start with 1/4 of the milk. Some cauliflowers are larger than others. If it is too thick you can add a bit more milk up to the 1/2 cup

Step 4

Then serve and enjoy

We liked the subtle flavor the ranch gave this dish. I omitted the milk so that it wouldn't dilute that, and I think it was just right. We used lemon thyme from our garden, and it paired really well with the cauliflower. I grated fresh nutmeg on top, so the amount was probably less, but that was OK, didn't want to overpower the others.
