"This is a combination of a couple of recipes. The original one with the glaze was WAY too high in fat and sugar, so I used another bread recipe and the glaze from the original. Nice addition to the holiday dessert table, or as a gift."

Step by Step Method

Step 1

Move oven rack to low position so that top of pan will be in center of oven. Preheat oven to 350ºF. Grease bottom only of a loaf pan, 8 1/2x4 1/2x2 inches.

Step 2

Stir together cranberries, sugar, oil, milk, orange extract, orange peel and eggs in large bowl. Stir in remaining ingredients. Pour into pan.

Step 3

Bake 50 to 60 minutes, or until toothpick inserted in center comes out clean.

Step 4

Cool 10 minutes on wire rack.

Step 5

Meanwhile, in a small bowl, whisk together powdered sugar and Grand Marnier. Glaze should be the consistency of corn syrup.

Step 6

Loosen sides of loaves from pan; remove from pan and place top side up on wire rack. Place wire rack over a cookie sheet.

Step 7

With a skewer, poke deep holes in top of loaf (about 10 holes evenly spaced). Drizzle with glaze so that it coats the top, runs down the sides and seeps through the holes.

Step 8

Cool completely before slicing

Very good cranberry bread. For the orange extra I used orange juice and used whole wheat flour for the flour. Except for the glaze, which I didn't make, made as directed for some very good bread. I made a small loaf and a mini loaf. Thanks for sharing!
