"I make these cranberry muffins every year and always get good comments on them - they are a little different from the usual as they use vanilla beans."

Step by Step Method

Step 1

Preheat oven to 375 degrees F.

Step 2

Line muffin tins with paper cups or spray with Pam.

Step 3

In a food processor place vanilla beans and sugar and process until vanilla beans are brown flakes.

Step 4

In a large mixing bowl cream the vanilla sugar and butter until smooth.

Step 5

Add eggs, one at a time, beating well after each addition.

Step 6

In a separate bowl combine dry ingredients (flour - salt).

Step 7

Add dry ingredients alternately with milk, mixing well.

Step 8

Fold in cranberries.

Step 9

Spoon batter into muffin cups.

Step 10

In a small cup mix sugar and nutmeg together and sprinkle over the muffins.

Step 11

Bake for 25-35 minutes or until muffins are done.

Tasty muffins! I changed it up a bit using vanilla instead of the pod, I added nuts, and used cinnamon instead of nutmeg. We loved them!

This is one of the best cranberry loaf/muffins I have made! I did not chop the cranberries. The vanilla bean really makes this special.

These muffins are awesome! Nice balance of sweet/tart that has you wanting another one! First batch I made, I sent down to my daughters. They loved them with a cuppa. Used fresh berries in those, but did not try or get pic. The second batch, I used dried cranberries that I soaked a wee while. These will definitely be made again. Thank you for sharing Ellie!
