Ingredients

The ingredients are:
  • 1/2 vanilla bean (cut into small pieces)
  • 1 cup granulated sugar
  • 1/2 cup butter
  • 2 large eggs
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup milk
  • 6 ounces fresh cranberries (1/2 a bag, chopped or sliced in a food processor using a slicing disk)
  • 2 tablespoons granulated sugar
  • 1/2 teaspoon nutmeg

How to Make

  • Step 1: Preheat oven to 375 degrees F.

  • Step 2: Line muffin tins with paper cups or spray with Pam.

  • Step 3: In a food processor place vanilla beans and sugar and process until vanilla beans are brown flakes.

  • Step 4: In a large mixing bowl cream the vanilla sugar and butter until smooth.

  • Step 5: Add eggs, one at a time, beating well after each addition.

  • Step 6: In a separate bowl combine dry ingredients (flour - salt).

  • Step 7: Add dry ingredients alternately with milk, mixing well.

  • Step 8: Fold in cranberries.

  • Step 9: Spoon batter into muffin cups.

  • Step 10: In a small cup mix sugar and nutmeg together and sprinkle over the muffins.

  • Step 11: Bake for 25-35 minutes or until muffins are done.
