Step 1: Preheat oven to 375 degrees F.
Step 2: Line muffin tins with paper cups or spray with Pam.
Step 3: In a food processor place vanilla beans and sugar and process until vanilla beans are brown flakes.
Step 4: In a large mixing bowl cream the vanilla sugar and butter until smooth.
Step 5: Add eggs, one at a time, beating well after each addition.
Step 6: In a separate bowl combine dry ingredients (flour - salt).
Step 7: Add dry ingredients alternately with milk, mixing well.
Step 8: Fold in cranberries.
Step 9: Spoon batter into muffin cups.
Step 10: In a small cup mix sugar and nutmeg together and sprinkle over the muffins.
Step 11: Bake for 25-35 minutes or until muffins are done.
