Step by Step Method
Step 1
Preheat oven to 350° F. Place cleaned cornish hens in a baking dish that has been sprayed with non-stick cooking spray.
Step 2
Sprinkle with salt and black pepper.
Step 3
Cover with foil and bake for 1 hour in preheated 350° F oven.
Step 4
Put orange marmalade, cayenne pepper, soy sauce and garlic powder in a microwave-safe bowl and heat 1 minute. Stir.
Step 5
Remove foil from hens and spoon the marmalade sauce over them and continue to roast for 1 more hour uncovered.
Step 6
Remove from oven and let rest for 10 minutes. They will be fall-off-the-bone delicious!

Serve and enjoy.
