"One of my favorite soups is Panera's Broccoli and Cheese so I was excited to add a copycat version here for safe keeping. Serve in sour dough or pumpernickel bread bowl with a little extra cheese on top and enjoy!"

Step by Step Method

Step 1

In a large saucepan over medium heat melt 1/4 stick of butter. While whisking add in flour and continue whisking until a roux is formed.

Step 2

Slowly whisk in the half and half until the roux has dissolved and then whisk in chicken broth. Allow to simmer for 15 minutes, stirring occasionally.

Step 3

While that liquid is simmering melt one teaspoon of butter in a small pan. Add the onions and carrots and saute 2-3 minutes or until onions start to soften. Remove from heat and set aside.

Step 4

Add onion and carrot mixture along with the broccoli to the liquid. Cover with a lid and simmer on low heat for 15 minutes, stirring occasionally.

Step 5

Remove the soup from the heat and use either an immersion blender or a blender to puree the soup ingredients until smooth. Return soup to pan and stir in nutmeg and cheese until melted. Serve immediately.

Daily Inspiration

Very tasty soup and easy to make. I made a few changes, but none that would alter the taste. I used whole milk vs. half and half and when the soup was done and I had used my immersion blender -- I added heavy cream . I also used sautéed green onions along with the carrots. This made a very filling soup - other than s & p and nutmeg, I didn't add any other seasoning; however, I felt it needed a little something more -- just couldn't decide. Great soup and one I would make again.

I love Panera's Broccoli Cheese soup. This one is very close....not sure what the difference is, but it could be the nutmeg. I"ll have to buy a bowl from there and refresh my memory! Made for your win in Football Tag game! Congratulations!!
