Step by Step Method

Step 1

First, fry the bacon.

Step 2

Let it cool and tear into small pieces.

Step 3

Leave the grease in the pot and set aside.

Step 4

Saute the onion in the reserved grease until they are clear.

Step 5

Add the corn, bacon, chilies, salt & pepper and the garlic.

Step 6

Simmer over a low heat and stir often so it doesn't stick.

Step 7

When it's heated through, drain the grease if preferred and serve.

Simplicity and yumminess - a goal of any side dish preparer! This fit the bill, and how could it go wrong with bacon and bacon grease as an ingredient? Made this side for both Thanksgiving and Christmas- and was asked for the recipe on both occasions. Added a bit of Chipotle Chili Powder for a smokey kick.
