  • 1 yellow onion (diced)
  • 4 ounces bacon, cooked and diced (4 strips)
  • 2 cups whole kernel corn (frozen)
  • 1 bell pepper (diced)
  • 4 ounces chilies, use any heat, Ortega, canned, optional (1 can)
  • 1 garlic clove, crushed
  • Salt, 1 pinch
  • Pinch black pepper

How to Make

  • Step 1: First, fry the bacon.

  • Step 2: Let it cool and tear into small pieces.

  • Step 3: Leave the grease in the pot and set aside.

  • Step 4: Saute the onion in the reserved grease until they are clear.

  • Step 5: Add the corn, bacon, chilies, salt & pepper and the garlic.

  • Step 6: Simmer over a low heat and stir often so it doesn't stick.

  • Step 7: When it's heated through, drain the grease if preferred and serve.
