Cold German Potato Salad

"This is one of those true German recipes. My dear MIL is a "true" German. Trying to get measurements from her is like pulling teeth. I have made this for DH for 43 years now. I still throw it together without measuring so one day while preparing it I tried to eyeball the amounts. Hope it works for you and that it is enjoyed. There is no sugar included like most potato salads. DH does like mayo on the side. Time does not include chilling."

Step by Step Method

Step 1

Cook potatoes in skin till tender (not too soft) needs to be on the firm side. Set aside to cool.

Step 2

Saute onion in water and butter till high simmer.

Step 3

Add bouillon cubes. Set aside to cool.

Step 4

Peel cooled potatoes and slice into circles about 1/8-inch thick.

Step 5

Put potatoes in casserole dish.

Step 6

Drizzle oil and vinegar over top of potatoes.

Step 7

Pour onion mixture on top, salt & pepper to taste finish with crumbled bacon bits.

Step 8

Do not mix at this time. Let sit at least 1-2 hours in the refrigerator to let flavors blend. Over night is best.

Step 9

Serve cold or bring to room temperature.

Step 10

Mix all together before serving.

I liked your MIL's version of GPS, as we call it in our family! (German Potato Salad). I've been making my mom's for years in the same way you mentioned - a little of this and a little of that. I used 4 potatoes, but they only weighed 1 pound, so I cut down the other stuff. But after tasting, I ended up putting in more stuff which was about equal to the original amount you mentioned. Does that make sense?? Anyway, this reminds me of my Tante Frieda's GPS - she was from the Swabian part of Germany. PS I garnished with a little parsley and chives.

KATO BABY

I served this cold with steak. It made a great side. It was quick and easy to make with nice results. I did let the salad sit in the fridge overnight and brought it to room temperature before serving. Big bold flavor with nice textures. So glad that we tried this lovely dish. Made FYC tag game.
