Step by Step Method
Step 1
Preheat the oven to 425 degrees.
Step 2
Cut the tomatoes into thin slices then core.
Step 3
Put two piles of tomato slices in overlapping fashion side by side in a baking dish
Step 4
And season with black pepper.
Step 5
Mix the mustard with soy sauce and two tablespoons of olive oil.
Step 6
Pour a few spoonfuls of the sauce over the tomatoes.
Step 7
Place the fillets on the tomatoes and spoon over the remaining sauce.
Step 8
Bake 15 to 20 minutes in the oven or until the cod is done.
