  • 2 (8 ounce) cod fish fillets
  • 24 ounces tomatoes (4 tomatoes)
  • 3 tablespoons mustard
  • 3 tablespoons soy sauce
  • 2 tablespoons olive oil
  • Pepper, dash
  • Salt, dash

How to Make

  • Step 1: Preheat the oven to 425 degrees.

  • Step 2: Cut the tomatoes into thin slices then core.

  • Step 3: Put two piles of tomato slices in overlapping fashion side by side in a baking dish

  • Step 4: And season with black pepper.

  • Step 5: Mix the mustard with soy sauce and two tablespoons of olive oil.

  • Step 6: Pour a few spoonfuls of the sauce over the tomatoes.

  • Step 7: Place the fillets on the tomatoes and spoon over the remaining sauce.

  • Step 8: Bake 15 to 20 minutes in the oven or until the cod is done.
