Step 1

Beat egg whites until they stand in peaks. Gradually add sugar, beat again until stiff. Carefully fold in coconut.

Step 2

Drop by teaspoonful on a cookie sheet covered with parchment paper and sprayed with veggie spray. Bake in a 250°F oven for 25 minutes. Do not preheat oven.

These are amazing! Very easy to put together, and VERY tasty! I doubled the batch, but made mine bigger than I think I was supposed to, because I got 30 cookies. Which might also explain why they took about 5 minutes longer to bake. But I'll definitely be making these again!
