Step 1
Remove and reserve stems from the cherries and then pit cherries and discard to stones.
Step 2
Reserve three-quarters cup of the chocolate and place remaining chocolate in a medium heatproof bowl and sit bowl over a saucepan of simmering water and stir until melted and then remove and transfer chocolate to a jug.
Step 3
Pour chocolate evenly into two x 12 hole silicone ice-cube trays and working quickly, sprinkle with coconut, and then insert a cherry into each hole.
Step 4
Combine the served chocolate with cream in a medium heatproof bowl and sit bowl over a saucepan of simmering water and stir until smooth and then remove and transfer to a disposable piping bag.
Step 5
Twist top and snip tip and then pipe chocolate around cherries to secure, then fill holes where stone were removed and insert reserved stems and refrigerate until firm.
