Step 1

Heat the oil in a fry pan and add the peppers, and cook over a medium, stirring occasionally during cooking and cook for approx 5 minutes.

Step 2

Add the garlic to the pan, then the chorizo and sherry and cook for 5 minutes more.

Step 3

Sprinkle over the oregano and season with salt and black pepper and serve.
