Ingredients

The ingredients are:
  • 2 teaspoons olive oil
  • 2 red peppers, de seeded and cut into 2cm, 3/4inch squares)
  • 2 greens peppers, de seeded and cut into 2cm, 3/4in squares)
  • 3 garlic cloves, crushed
  • 300 grams chorizo sausage (cut into 2 cm, 3/4 inch cubes)
  • 2 tablespoons dry sherry
  • 1 teaspoon oregano, dried
  • Salt and freshly ground black pepper (to taste)

How to Make

  • Step 1: Heat the oil in a fry pan and add the peppers, and cook over a medium, stirring occasionally during cooking and cook for approx 5 minutes.

  • Step 2: Add the garlic to the pan, then the chorizo and sherry and cook for 5 minutes more.

  • Step 3: Sprinkle over the oregano and season with salt and black pepper and serve.
