Step by Step Method
Step 1
In a large bowl cream the butter with sugar until well blended.Add the eggs and vanilla to the creamed mixture and beat until combined.
Step 2
In a medium bowl combine the cocoa powder with flour, baking soda, and salt.
Step 3
Slowly add the dry ingredients and continue mixing until incorporated.
Step 4
Mix in mini chocolate chips.
Step 5
Shape the dough into 2 logs that are about 2-inches high and 1-foot long.
Step 6
Wrap each roll in plastic wrap or waxed paper and place in the refrigerator for about 3 hours or until thoroughly chilled.
Step 7
Preheat oven to 350 degrees F. Set oven rack to second-lowest position.
Step 8
Once thoroughly chilled slice the cookies into 1/2-inch thick rounds then coat in white sugar.
Step 9
Place on a parchment paper lined cookie sheet and bake for about 8 minutes, for firmer cookies bake a few minutes longer
Step 10
Remove to a wire rack to cool.
