  • 1 1/2 cups butter, room temperature
  • 2 cups granulated sugar (more for coating)
  • 2 large eggs
  • 2 teaspoons vanilla
  • 3/4 cup unsweetened baking cocoa powder, sifted
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup mini chocolate baking chips (optional)

How to Make

  • Step 1: In a large bowl cream the butter with sugar until well blended.Add the eggs and vanilla to the creamed mixture and beat until combined.

  • Step 2: In a medium bowl combine the cocoa powder with flour, baking soda, and salt.

  • Step 3: Slowly add the dry ingredients and continue mixing until incorporated.

  • Step 4: Mix in mini chocolate chips.

  • Step 5: Shape the dough into 2 logs that are about 2-inches high and 1-foot long.

  • Step 6: Wrap each roll in plastic wrap or waxed paper and place in the refrigerator for about 3 hours or until thoroughly chilled.

  • Step 7: Preheat oven to 350 degrees F. Set oven rack to second-lowest position.

  • Step 8: Once thoroughly chilled slice the cookies into 1/2-inch thick rounds then coat in white sugar.

  • Step 9: Place on a parchment paper lined cookie sheet and bake for about 8 minutes, for firmer cookies bake a few minutes longer

  • Step 10: Remove to a wire rack to cool.
