Step by Step Method

Step 1

Add chocolate and cream to a glass bowl and place over a pot of gently simmering water and with a metal spoon (DO NOT USE A WOODEN SPOON) stir until the chocolate has melted and then remove from the heat and cool slightly.

Step 2

In a mixer, whisk the egg whites until soft peaks form and then add the sugar and whisk until stiff peaks form.

Step 3

Add egg yolks to the chocolate along with the coffee and mix to combine.

Step 4

Now gently mix in 1/3 of the egg whites into the chocolate mixture and then add the remaining egg whites and gently fold in to retain the light airy texture.

Step 5

Pour into individual glasses and refrigerate until chilled (about 2 hours), just before serving garnish with pistachios.
