Step by Step Method

Step 1

In a medium mixing bowl combine flour, baking powder, and salt; set aside.

Step 2

In a small saucepan, heat 1 cup of the chocolate pieces over low heat until melted, stirring constantly.

In a large mixing bowl beat butter with mixer on medium speed 30 seconds.

Step 4

Beat in sugar until fluffy. Beat in melted chocolate, eggs, vanilla, and mint flavoring.

Step 5

Gradually beat in the flour mixture and remaining chocolate pieces.

Step 6

Wrap dough in plastic wrap.

Step 7

Freeze for 30 minutes or until firm enough to shape into balls.

Step 8

Preheat oven to 350 degrees F.

Step 9

Shape dough into 1-inch balls; roll balls in powdered sugar.

Step 10

Place balls about 2 inches apart on ungreased cookie sheet.

Step 11

Bake in preheated oven for 10 to 12 minutes or until tops are crackled.

Cool 2 minutes on cookie sheet.

Step 13

Transfer to wire racks; cool.
