Step by Step Method
Step 1
Preheat oven to 180°C.
Step 2
Heat the maple syrup and coconut oil in a small saucepan over medium heat, stirring, until smooth and well combined.
Step 3
Combine the oats, hazelnuts, pecan, cocoa powder and mixed spice in a large bowl and add maple syrup mixture and toss until well combined.
Step 4
Spread evenly over a large baking tray and bake, stirring halfway through cooking, for 10-12 mins or until golden and then set aside on the tray to cool completely.
Step 5
Add the coconut, pepitas and cacao nibs to the granola and toss to combine.
Step 6
Spoon into jars and store in a cool, dark place for up to 1 month.
