Step by Step Method

Step 1

Preheat oven to 425 degrees F.

Step 2

Butter 20 muffin cups.

Step 3

In a bowl mix all ingredients, whisking until only tiny specks of flour remain (about a minute).

Step 4

Divide batter among muffin cups.

Step 5

Bake for 15 minutes (NEVER OPEN OVEN DOOR). Reduce oven temp (without opening the oven door) to 350 degrees F and continue to bake until puffed, brown and crisp (look through window in oven) about 15 minutes. Loosen popovers from pans and transfer to basket and serve hot.

I have to admit, that I totally screwed up this recipe. Forgot the eggs! I realized my mistake when they were already in the oven. Yikes! Because of this, they didn’t rise and were heavy in the middle, totally my fault. I was so disappointed because the flavor was so good. Used scallions in place of chives, seeing that’s what I had. We did enjoy them, just scooped out the middle and buttered it up. I’ll have to make these again by paying more attention. Thank you, ellie, for sharing and sorry for my mishap. Made it for Billboard tag game.
