Step 1: Preheat oven to 425 degrees F.
Step 2: Butter 20 muffin cups.
Step 3: In a bowl mix all ingredients, whisking until only tiny specks of flour remain (about a minute).
Step 4: Divide batter among muffin cups.
Step 5: Bake for 15 minutes (NEVER OPEN OVEN DOOR). Reduce oven temp (without opening the oven door) to 350 degrees F and continue to bake until puffed, brown and crisp (look through window in oven) about 15 minutes. Loosen popovers from pans and transfer to basket and serve hot.
