  • When selecting mushrooms for the recipe, try to find mushrooms that are similar in size so they cook evenly.
  • Be sure to select shrimp that are fresh and not frozen for the best flavor.

  • Substitute mushrooms with diced bell peppers for a sweeter flavor. This substitution will add a sweet flavor to the omelet and provide a crunchy texture.
  • Substitute bean sprouts with diced carrots for a nuttier flavor. This substitution will add a nutty flavor to the omelet and provide a crunchy texture.

Vegetarian Omelet Replace the shrimp with 1/4 cup of diced tofu and 1/4 cup of diced bell peppers. Cook until the tofu is lightly browned and the bell peppers are softened. Add the onions and toss. In the other skillet, heat the oil and beat the eggs with the water and soy sauce. Add the filling to one side after the eggs are almost cooked, and fold over.

Steamed Jasmine Rice. This light and fragrant rice is the perfect accompaniment to the Chinese Shrimp Omelet. It's the perfect balance to the savory omelet and helps to round out the meal.

Stir-Fried Broccoli: This simple yet flavorful dish can be quickly cooked in a wok and is a great way to add more vegetables to the meal. The bright green color and crunchy texture of the broccoli complements the omelet and rice, and adds a nice contrast to the other dishes.

This made a delicious and filling dinner. All was going to perfection until the flip and it broke up on me but it certainly didn't effect the taste. The sub I made though was as I didn't have any green/spring onions I used a thinly sliced golden shallot which I cooked with the mushrooms.
