"A spin-off of Kittencal's Crispy Skillet Potato Slices...a very quick filling meal with little prep time. Used up several leftovers in my fridge and a pantry item and it was delicious! I would love fresh cilantro with this, but unfortunately at this time of the year I have none. :( Just a note...when I baked the potatoes, I pierced them several times with a fork and then brushed the skins with a small amount of olive oil, garlic powder, and salt."

On 4/8/13,there was a leftover baked potato in my fridge that was either needing to be used or tossed.So,I decided to use it to make this recipe.Except for using a canned chili,(next time I'll use homemade)the recipe was made as it was written.This dish reminds me a lot of Chili Cheese Fries.If your looking for a " HEARTY MAN TYPE MEAL " here it is. Great flavour combination. We love onions so I used a whole onion and let them almost carmelize.  I used Stagg chili (it is an offshoot from Hormel) and it was just right. Thanks Willow for another tasty recipe
