"Chilaquilles are my favorite Mexican side dish. They go well with any Mexican meal, but they are especially good for breakfast served with eggs. Recipe adapted from María Teresa Bermúdez's Mexican Family Favorites cookbook."
Sauce: Heat oil and brown flour. Add chili powder to water and dissolve, then add to browned flour and mix well. Add seasonings and blend. Bring to a boil, stirring frequently. Simmer, covered, for 5 minutes.
In skillet, saute onions in a bit of oil. Add tortilla pieces and saute until softened.
Add green olives and mix. Then add chili sauce, stirring thoroughly. Cook for 5 minutes over medium heat.
Add cheese, stir and leave covered over low heat. Serve when cheese is melted.
