Step by Step Method

Step 1

Shawarma Spice Blend: In a bowl combine cinnamon, salt, pepper, cloves, nutmeg and cardamom.

Step 2

N a shallow glass dish, combine chicken breasts with 1/2 cup of the sweet onion vinaigrette. Marinate in the fridge for 1 to 4 hours.

Step 3

Remove chicken from marinade and discard marinade. Sprinkle chicken with Shawarma spice blend to coat lightly. Grill or broil chicken for 4 to 6 minutes per side or until chicken is no longer pink in centre. Set aside to cool; cut in diagonal strips.

Step 4

In a non-stick skillet over medium heat, cook apple rings in 1/4c maple syrup until softened and slightly caramelized. Remove to a rack and cool.

Step 5

Toss pecans with remaining 1/4 cup maple syrup and place on a baking sheet. Bake in a preheated 350 F oven, stirring often, for 12 to 15 minutes or until toasted and glazed. Cool.

Step 6

Divide spinach among 4 plates. Top with onion rings, shredded cheese, pecans, blueberries, apple rings and sliced chicken. Drizzle salads with remaining 1/2 cup sweet onion vinaigrette

If you want boring, this salad is not it. If you want a salad that is flavorful that will make your dinner interesting, this is the one. The spice blend makes for a delicious tasting chicken and the whole thing tickled the taste buds. I couldn’t find sweet onion vinaigrette, so took a page from reviewer “Life Is Good” and marinated the chicken in Foutoush salad dressing, taken from the following recipe https://www.recipezazz.com/recipe/dubais-fattoush-salad-40579. Came out excellent and the fam loved it. Made if for Best Of 2023 as recommended by “WhatamIgonnaeatnext?”

These flavors go really well together. I put extra onion on mine because I felt it was good for taming the sweetness. The market I was at didn't have the sweet onion vinaigrette, so I used sweet onion dressing.

10 stars please! This FABULOUS salad goes directly into my Best of 2023 file. It had several components but was so worth the extra effort. Those maple candied pecans were amazing. We also really loved the maple apple rings. Every part of this salad came together to make a delicious dinner. Two changes I made: I made the shawarma spice mix, but then completely forgot to sprinkle it over the marinated chicken! Oops. Also, I couldn't find sweet onion dressing, so marinated the chicken in a fattoush dressing. It still turned out fabulous. Thank you!
