Step by Step Method
Step 1
Combine pineapple, carrot, green and jalapeno peppers in a medium bowl, toss gently.
Step 2
Combine vinegar and the next 3 ingredients and stir well with a wire whisk.
Step 3
Pour over pineapple mixture, add basil and toss.
Step 4
Cover and chill 1 hour.
Step 5
Top with gorgonzola just before serving.
Step 6
Garnish with basil sprigs, optional.
