Ingredients

The ingredients are:
  • 2 cups fresh pineapple,chopped
  • 1/2 cup carrot, shredded
  • 1/2 cup green pepper, julienned
  • 1 tablespoon jalapeno pepper,minced
  • 2 tablespoons thai basil, chopped
  • 3 tablespoons rice vinegar
  • 3 tablespoons unsweetened pineapple juice
  • 1 tablespoon honey
  • 1 teaspoon canola oil
  • 2 ounces crumbled gorgonzola

How to Make

  • Step 1: Combine pineapple, carrot, green and jalapeno peppers in a medium bowl, toss gently.

  • Step 2: Combine vinegar and the next 3 ingredients and stir well with a wire whisk.

  • Step 3: Pour over pineapple mixture, add basil and toss.

  • Step 4: Cover and chill 1 hour.

  • Step 5: Top with gorgonzola just before serving.

  • Step 6: Garnish with basil sprigs, optional.
