Step 1: Combine pineapple, carrot, green and jalapeno peppers in a medium bowl, toss gently.
Step 2: Combine vinegar and the next 3 ingredients and stir well with a wire whisk.
Step 3: Pour over pineapple mixture, add basil and toss.
Step 4: Cover and chill 1 hour.
Step 5: Top with gorgonzola just before serving.
Step 6: Garnish with basil sprigs, optional.
