"These are decadent and addicting! Healthy and great for a pick me up snack when you are hungry. These are diabetic friendly. 5 - 7 g of net carbs depending on how much honey you use. I use organic products so when purchasing ingredients it will seem a bit pricey however you can make several batches over time. They yield about 25 balls or you can make them smaller and they will yield 40-50 balls with net carbs 2.5g each. I freeze mine in ziplock snack bags for easy to grab and go. Use the dark cocoa powder as it is healthy for you. As my athletic daughter puts it "she is obsessed with these." She eats them when she is training for cycling. The 1st time I made these I didn't run the food processor long enough to form a ball so they looked more like a peppermint patty."

Step by Step Method

Step 1

Place sunflower seeds, sesame seeds, hemp hearts, chia seeds, 1/4 cup coconut and cocoa powder on a food processor.

Step 2

Process for about 20 seconds to grind everything

Step 3

Add in almond butter , coconut oil, and honey. Process until mixture forms a ball and all the ingredients are blended well

Step 4

Form mixture into 1 inch balls and roll into the remaining coconut to coat

Step 5

Place on a cookie sheet and refrigerate for an hour before serving. You can freeze them after this step in a ziplock back.
