"A great alternative to "plain" potatoes as a side dish. They are lots of fun for entertaining and not difficult to prepare. These stuffed pepper rings can also be prepared ahead of time, and then baked prior to serving, which makes it great for parties. A nice side dish from the traditional baked or roasted potatoes."

Step by Step Method

Step 1

Mashed Potatoes ... Use any method you like to make your potatoes; but, do not add any butter, salt, or other ingredients at this point - just mash them.

Step 2

Peppers ... As the potatoes cook, prepare the peppers. Cut the top and bottom off of each pepper; then, cut the peppers into 1" (approximate size) rings. Remove the ribs and seeds. Usually, you will get 3 (1") rings per/pepper. Microwave the rings for 1 minute, medium heat; in a shallow glass dish covered with plastic wrap. This will give them a head start, so you end up with a tender pepper after cooking. Microwaves vary, so keep an eye on them. You just want them to be slightly tender, not soft.

Step 3

Potato Filling ... In a small saute pan, add the butter and bring to medium heat; then, add the garlic, onion, scallions, Italian seasoning, and cook 2-3 minutes until tender. Remove from the heat; and, add to the mashed potatoes; and, mix until well combined.

Step 4

Next, add cheese, ham, parsley, egg; and, stir until creamy. If the potatoes seem a bit stiff; add a little of the chicken broth. Make sure to season well with salt and pepper.

Step 5

Bake ... On a baking sheet lined with foil or parchment paper, spray with a non-stick spray; and, set the rings down. Fill each ring with the potato mixture, and be sure to press down and fill completely. Bake 25-30 minutes in a 350 degree oven, middle shelf, until golden brown and the peppers are soft and tender. Finish by adding the remaining cheese on top of each pepper; and, cook 3-5 minutes, just until the cheese melts.

Step 6

Serve and ENJOY! ... As I mentioned, these can be made ahead, and then baked right before serving. Just make sure to let them come to room temperature before baking. Perfect for a party or entertaining.

Did these up for supper, sorry they didn't turn out well, although they tasted ok, not a lot of flavour. It could have been me, i do not care for the way the instructions were half in the intro and half in the how to make section of the recipe, had to keep flipping back and forth between 2 pages, it became quite confusing. Ended up with too much filling, made potato pancakes with the rest, my filling turned out sloppy and leaked out of the rings. Sooo Sorry Kim, it just did not work for me, i didn't take photos because they din't look any thing like the description.
