Step by Step Method

Step 1

Preheat oven to 375°F. Spray a medium skillet with cooking spray. Heat over medium-high heat. Add onions. Cook, stirring occasionally, until slightly soft, about 3-4 minutes.

Step 2

Mix onion, 1/4 cup ketchup, 1 tablespoon mustard, mozzarella, bread crumbs, parsley, Parmesan, oregano and egg in a large bowl. Add beef, garlic powder, salt and pepper. Mix lightly.

Step 3

Spray a loaf pan with cooking spray. Press beef mixture into pan. Combine remaining 1/2 ketchup and mustard in a small bowl. Spread over top of meat loaf.

Step 4

Bake meat loaf until set and cooked through, about 1 hour.

I did not use the parmesan cheese as my lot call it spew cheese and refuse to eat it or anything cooked in it so I used a mix of mozzarella and an aged cheddar and scaled back for 4 serves and cooked for 45 minutes at 175C fan forced. Really appreciated the inclusion of the Dijon mustard in with the ketchup/tomato sauce was a pleasant change and not over sweet, thank you EvieTaylor made for Alphabet Soup Tag Game.

Love how the ingredients came together, great texture and taste. I made this using large muffing cups for individual servings. I didn't have the part skim mozzarella so went with the one I always use, topped with that lovely sauce these little mini meat loaves were winners at our house.
